This was a favorite recipe from my great aunts. I am assuming it is of Swiss or German derivation since that is our ancestry. It is best with fresh berries, but frozen can be used, if fresh are unavailable. You can substitute almond extract for the vanilla, if preferred. -- posted by Librarybaker

One of my recent cake inventions - a standard Victoria Sandwich Sponge with a few delicious additions! Fresh oranges and lemons, lemon curd, crystallised violets and mascarpone cheese make this basic sponge cake moist and special enough for the Easter Sunday tea-time table, or for Mum on Mother's Day! I used lemon curd for the icing, but orange curd would also work if you wanted a mellow flavour. I have a recipe for crystallised violets on Zaar, Recipe #216296, and if you don't have any fresh violets, use any sugar paste flowers or cake decorations that work for you - the object is to make a Posy of flowers! This makes a big cake with one layer, you can cut the cakes again and make a three layer gateau if you wish. This cake disappeared quite quickly, but if you have any left, it keeps EXTREMELY well in a tin for up to one week. The sponge cakes can be frozen before icing, cutting back on time if you are going to be busy for the special event. -- posted by French Tart

In my small bakery I've searched high and low for a sticky bun recipe that is made from scratch since I don't use pre-mixed ingredients. THIS, I tell you, is the absolute best. I retrieved it from Cook's Entertaining magazine (Cook's Illustrated). Use a food processor fitted with the dough blade if you have one readily available. I deviated a little by not doing the Pecan Topping. Just feel there's enough glaze. Putting the recipe in just in case you'd want to use it. This is our fall favorite. Unfortunately our two apple trees are very early apples which cannot be stored for more than two or three weeks, so we have tons of apples which have to be eaten, canned, preserved or made into cake within a fortnight... I don't know where I got this recipe from, but I've made it for more then ten years now and no matter how many loaves I make, they vanish rapidly. Although I cannot eat this bread anyway, I make it gluten free, using gluten free cake flour mix. It works well with a mix of brown, white and sweet rice flour plus some arrowroot starch (just use your preferred gluten free cake flour mix), but making it gluten free means adding an egg or egg replacer, too, or it won't stick together. Williams-Sonoma Essentials of Baking book recipe. This cake came out very delicious and taste great with a cup of coffee. Just a couple of words of wisdom to newbie bakers: Always sift your dry ingredients (this helps make your cake lighter instead of denser). Make sure your eggs and butter are at room temp (otherwise your cake would not be as smooth). Follow instructions/measurements PRECISELY! Grease and flour your pan very well (this will help very much when it comes time to removing the cake from the pan). Have all your ingredients on hand and read the recipe before beginning (take it from me, you don't want to end up skipping a step or missing an ingredient because you rushed thru it). Do not open the oven while it is baking. Invest in buying a pastry blender. Always let the cake cool in the pan the indicated time or your cake will fall apart to pieces if you remove it to soon from the pan. This recipe requires atleast 3 medium-large mixing bowls. My grandmother gave me her old cookbook from the 40's and in it are amazing numbers of newspaper clippings. This is a recipe from a newspaper clipping with no idea where or when it was printed. I have used this for over 15 years and have found that nuts, dates, raisins etc can be added at the end for a new taste. Also can use 2 teaspoons "pumpkin Pie seasoning" to replace the cinnamon and nutmeg. A dash of cloves also gives it a touch of difference. -- posted by Wife-w-kids

I'd really say this is a lemon loaf, but it is more cakey, than it is bread-y--that's for sure! In Hawaii. the Pineapple is a symbol of Hospitality, so this "friendly" banana-pineapple bread with macadamia nuts is just the right thing ;) to serve when yo are having guests over or to take with you to give as a nice house warming gift or as a delicious treat for your hosts. Clients of the company I work for give us fresh cranberries every year at Thanksgiving. this year, I decided to actually DO something with them. I made this cranberry cake several times in one week because we just can't get enough of it. It's sweet with a golden crumb, soft and moist, and dense without being heavy, with juicy explosions of tart cranberries. This is also really easy; it comes together in about 10 minutes. Sometimes, I will cover it in whipped cream, but lately I have been baking it instead with a topping of pecans caramelized in butter and brown sugar.
